<p>I know this may seem like a silly idea to many of you, saving a seed bank, but this is truly one of the most important aspects to a healthy future. We are finding out that many of our health issues are related to modern agriculture growing food in a mono-cultural system, one crop fields, because it is easiest to harvest that way. Nature defends herself when stripped of biodiversity and sends in the weeds bugs, fungus, etc. into the &#8220;unnatural&#8221; area to break it all down and build the natural diversity back in. Farmers using this monoculture system have been battling this issue for a millennium.  This is why all the herbicides, pesticides, and fungicides, but in turn are contaminating our creeks, rivers, and ground water to a level that many small towns across America, including one less than 10 miles from my folks place south of KC, can&#8217;t  use the water they&#8217;ve had as a resource ever since they became a town, for drinking or even bathing!</p>
<p>As we continue to allow our natural resources to be contaminated or rights sold to the highest or most connected bidder, we are going to continue to create a disastrously, unhealthy environment. In this case. the Pavlovsk Station,  has most of the varieties as actual living plants on the property, where most seed banks around the world just have the seeds. <p>You see, Nature, even in agricultural areas, needs biodiversity in order to be healthy. If you believe in health and nutrition, this is where it all begins. Variety, high quality from nature (non-genetically-modified) seeds. We&#8217;ve lost our rights to water. Let&#8217;s not do the same with seeds. Let&#8217;s actually start working to get back every living beings rights to the most basic necessities of food and water. </p>

<h3> Served with steamed asparagus &amp; fresh cut peaches.</h3>
<p>This is a great summer recipe! It&#8217;s full of the seasons aromatic herbs and spices.</p>
<p>The &#8220;Herbs de Provence&#8221; can be found in most grocery stores &amp; contained in 1 seasoning bottle (as labeled).</p>
<p>Serves: 4 </p>
<p><strong><span style="text-decoration: underline;">Ingredients:</span> 1</strong> pound ground Buffalo, <strong>2 cups</strong> Short Grain Brown Rice,<strong> 1/2 bunch</strong> of Asparagus Shoots, <strong>4</strong> peaches<strong> 3 small</strong> cloves garlic, <strong>3T</strong> fresh  ground Romano Cheese, <strong>1 small</strong> shallot, <strong>1/2 tsp</strong>&#8220;Herbs de Provence&#8221; (savory, thyme, rosemary, basil, tarragon, lavender,  basil, <strong>1/4 tsp </strong>smoked Spanish Paprika, <strong>1/8 tsp </strong>ground cayenne, chili powder, garlic powder, <strong>1T</strong> butter,<strong>1T</strong> coconut oil,<strong> 1T</strong> olive oil (spread on top), salt and pepper to taste.</p>
<p>1. Bring water to boil, turn down heat, add rice, simmer for 45 min. or until done </p>
<p>2. Add butter and coconut oil to pan, let oil heat up, cook shallots and garlic until golden</p>
<p>3. Add herbs and spices to oil, turn off heat, let simmer for 5 min.</p>
<p>5. Begin to steam Asparagus in medium sauce pan, cook for 10 min.</p>
<p>4. Remove herbs &amp; spices from pan, turn on heat, cook buffalo until browned</p>
<p>5. cut peaches into 8ths, place in bowl</p>
<p>6. Once rice is finished, add rice &amp;  herb mix to buffalo, sprinkle with olive oil and Romano cheese, mix until lightly blended</p>
<p>7. Salt &amp; pepper to taste, serve with asparagus and peaches</p>

<p>Hippocrates, the father of Western medicine said, &#8220;Let your food be your medicine, and your medicine be your food.&#8221;  Even though common sense has told us this before, the research has now proven it as well.  Our health issues are due to our lifestyle, 90-95% of the time (except for rare instances). What you got from your parents are conditioned patterns, not “bad” genes.</p>
<p>When you start to believe this you will place the responsibility back to where it belongs, out of your doctor’s hands and back into your own lap.  When you truly believe in the healing energy of natural food and seek out it&#8217;s highest quality (without ever having to read a label), you will see the difference, feel the difference, know the difference, and will be livin’ the difference of a truly vibrant and healthy lifestyle.  Even if you drink beer or wine on occasion, drink the good stuff!</p>
<p>Get to know the farm that supplies your food, through CSA&#8217;s (Community Supported Agriculture) &amp; farmer’s markets.  Talk to them about their farm and how they go about growing healthy food. They will appreciate it, and so will you!  Visit some of these local farms and you will realize they are producing what we might call “beyond organic”.  These foods are so good because they are a pure vibrant food.  They are harvested at the right time, so there is less time between picking and selling. This produce is usually from an amazing array of seeds and has the energy and nutritional punch of 10 regular store bought strains all packed into one. </p>
<p> I’ve seen it, and felt it, time and time again.  Quality food is the ultimate elixir, Period.  There are direct links to almost every major mental, emotional and physical disease or disorder.  Clean up the diet, and you will be amazed at what heals.   As with most diseases and disorders, there can be a point of no return. So don’t wait until it’s too late!</p>

			<content:encoded><![CDATA[<p>This morning we had a great workout with the ViPR&#8217;s  (here&#8217;s a link of them in action for those who missed class today <a href="http://vimeo.com/11384587">http://vimeo.com/11384587</a>)!!!  This is the newest fitness tool to be released in the U.S. later this year.  So, you are some of the first people to see/use this product!  The only others who have them in the U.S. include the 49&#8242;ers, Phillies, Longhorns, and Spurs.  Thanks to Michol Dalcourt,Val and the PTontheNet/FitPro North America team for the sneak preview of this AWESOME training tool.<br />

How many of you did your homework last week and did three more days of a 60 minute activity?  What did you do?<br />

This week&#8217;s homework is to get outside for a hike, bike, walk, run, camping trip at least 2 times before our next class on Wednesday.  In addition to this, I would like to challenge all of you with&#8230;..(drum roll please)&#8230;.THE VEGGIE CHALLENGE!!!  (sounds of shrieking and gasping)<br />

Chop up your favorite veggies (carrots, snap peas, peppers, celery, cucumber, tomatoes, etc) and put them in a ziplock sandwich bag.  You must eat half of the veggie bag before 12pm and the other half must be gone before you leave work at night.  The people who do this every work day (Mon-Fri) for the next 8 weeks (starting tomorrow) will receive a complimentary MAT (Muscle Activation Techniques <a href="http://www.muscleactivation.com">www.muscleactivation.com</a> ) session with me.  (Disclaimer: If you have an allergy to any particular foods or vegetables, please let me know so I can accomodate)<br />

Vegetables are like the dump trucks of our bodies.  They help in removing waste and keeping our systems clean and healthy.  Imagine if you didn&#8217;t take the garbage out of your house every day.  It would slowly build up and start stinking up the entire place.  The same thing happens if you don&#8217;t eat your vegetables.  Vegetables provide the body with essential vitamins, minerals and fiber for the body.  They also are &#8220;Nutrient Dense&#8221;.  Meaning, they give you the most nutritional benefit for the least amount of calories.  The best bang for the buck.<br />
